Wagyu Beef comes from several breeds of cattle genetically predisposed to intense marbling and to producing a high percentage of oleaginous unsaturated fat. These cattle yield this extraodinary steak. A 5 to 6 on the Japanese Marbling Scale is only 1% of the beef in the USA and also rated the highest grade(USDA Prime). Kobe Steaks graded from 10 to 12 are extremely rare to and never seen in the market place.
