Our Wagyu Kobe Fillets of Sirloin are aged to perfection and although it is rated USDA Prime Beef, it actually rates way above according to the Japanese rating system. Wagyu Beef comes from several breeds of cattle genetically predisposed to intense marbling and to producing a high percentage of oleaginous unsaturated fat. These cattle make this extraodinary steak. A 5 to 6 on the Japanese Marbling Scale is only 1% of the beef in the USA and also rated the highest grade(USDA Prime Beef). Kobe Steaks graded from 10 to 12 are extremely rare and never seen in the market place.
